We're talking six to eight months of hands-on learning, practical application, and real feedback from people who've spent decades in professional kitchens.

Look, I'm not going to promise you'll be plating at a Michelin-starred restaurant by next month. That's not realistic. But what I can tell you is that this program focuses on fundamentals that actually matter in real kitchens.

Program Structure & Timeline
We've organized this into three main phases. Each one builds on the last, and you can't really skip ahead—trust me, people have tried. The foundation matters more than you'd think.
Months 1-2
Foundation & Core Principles
This is where most people realize plating is more technical than they expected. We start with the basics—and I mean really basic. Sauce consistency, proper garnish preparation, understanding plate zones.

Months 3-5
Advanced Techniques & Creativity
By month three, you're working with more complex compositions. This phase gets challenging because we introduce time constraints—because in an actual kitchen, you don't have twenty minutes to plate one dish.

- Menu development with plating considerations
- Speed plating for service efficiency
Months 6-8
Professional Application
The final phase is where everything comes together. You'll work on creating cohesive multi-course presentations and adapting techniques for different service styles—from fine dining to casual concepts.

- Final project: complete tasting menu design
Important note: This program runs on a rolling enrollment basis. Classes start throughout the year, and you'll work at your own pace within the structured timeline. Most students complete the full program in 6-8 months, though some take up to a year depending on their schedule and practice commitment.
Learning Format & What You'll Actually Do
People always ask what the day-to-day looks like. It's a mix—some weeks are more lecture-heavy, others you're in the kitchen for hours. We try to balance theory with practice because you need both to really understand this stuff.
Weekly Structure
Interactive Sessions & Practice
Two live sessions per week, usually around two hours each. One is typically technique-focused—we demonstrate, you follow along. The other is more feedback-oriented where you present your practice work.
Between sessions, you're expected to practice. A lot. Most successful students spend 5-8 hours per week outside of class time working on techniques, photographing their plates, and refining their approach.
Feedback & Growth
Instructor Review Process
Every week you submit photos of your plating work. We review composition, technique, creativity—everything. The feedback can be pretty detailed, sometimes pointing out things you'd never notice yourself.
There's also peer review. Other students comment on your work, which honestly can be more helpful than instructor feedback sometimes. They're dealing with the same challenges you are, so they get it.
